How to make flan without condensed milk

The process of making a vanilla flan can be divided into two main parts: the preparation of the caramel and the preparation of the flan itself. To make the caramel, sugar and water are mixed in a saucepan and cooked until it acquires an amber color. This caramel is poured into a mold and left to cool. To make the flan, beat eggs in a bowl and gradually add sugar, followed by warm evaporated milk and vanilla essence. This mixture is poured over the cooled caramel in the mold and cooked over a slow fire for 35 to 45 minutes. After cooling and refrigerating for at least 2 hours, the flan is ready to be unmolded and enjoyed.

  • 1 cup of sugar
  • 1/4 cup water
  • 4 eggs
  • 1/2 cup sugar
  • 1 can of evaporated milk (354 ml)
  • 1 tablespoon of vanilla essence
  • A pinch of salt

Method of preparation

  1. In a saucepan, away from the heat, add the mixture of sugar and water and mix until it reaches a homogeneous consistency.
  2. Place the casserole over a medium-low heat and cook for 4-6 minutes.
  3. Continue cooking until the sugar caramelizes and acquires an amber color.
  4. Transfer the caramel to a flan mold and set aside.
  5. In another bowl, add the eggs and beat lightly.
  6. Gradually add the sugar, removing it constantly.
  7. Heat the evaporated milk in the microwave for 1-2 minutes and gradually add it to the mixture of eggs and sugar, stirring constantly.
  8. Add the vanilla essence and the salt pepper to the mixture.
  9. Paste the flannel mixture 2-3 times to remove any lumps or impurities.
  10. Pour the flan mixture over the caramel in the mold.
  11. Cover the mold with aluminum foil and place it inside a furnace.
  12. Add hot water (2-3 cups) to the furnace around the mold with the flan.
  13. Place the furnace in the oven on a low heat and cover it with a lid.
  14. Cook the flan on the stove for 35 to 45 minutes, or until it is firm to the touch.
  15. Remove the mold from the oven and let it cool completely at room temperature.
  16. Once cooled, refrigerate the flan for at least 2 hours, or until it is very cold.
  17. Slide a knife along the edge of the mold to remove the flan.
  18. Invert the mold onto a plate to carefully unmold the flan.
